What is the basis in Shas & poskim for the minhag among chasidim not to eat מצה שרויה? The simple reading of the sugya indicates that a cooked Matza qualifies for the mitzva of Matzah, as long as the Matzah is not completely dissolved. The Ra'avan quotes a minhag that one should avoid soaking his matzah in soup. The premise was that there would be a possibility that the matzah could become chametz. What about grinding a matzah to create flour? This was meant to be avoided according to an ancient minhag. The sugya discusses taking kernels of wheat and drying them in an oven & adding these as an ingredient in a food being cooked. Mar Zutra was opposed to it. There is a dispute about the permissibly of this process amongst the Rishoning.
