Eating and drinking on Erev Yom Kippur is a holy process - subjugation of the ingredient of sin for the purposes of Teshuvah. On Yom Kippur we experience a day akin to Olam Habaah. Thus, the ninth of Tishrei is representative of Olam Hazeh and is celebrated for its preparatory role.
