The Sfas Emes explains the reason why the mitzvah of Bikkurim is the paradigm of hakaras hatov and a blueprint for teshuva: to harness the beginning of a process to return to our original purity. We added that it may explain why we go through the origin of the Jewish people. The Mei Hashiloach explains that the farmer ‘harshly’ remarks to the Kohen that he too is fulfilling an avodah in the beis hamikdash.
